This hearty breakfast is a weekend treat that I trace back to my early childhood. Dad made the best and I am sharing his original recipe!
Chipped beef with a creamy white sauce for breakfast is a favorite meal when visiting my parents on the Outer Banks.
I've enjoyed this salty and creamy breakfast special going back years.
It is really one of those favorite comfort foods everyone in my family just loves to this great way to start the day.
So anytime we visit we always ask Dad to make enough for everyone.
He learned about this popular meal from the army cooks during basic training a long time ago in the mess halls where this classic dish was known as S.O.S – otherwise known as Sh*t On a Shingle.
No Sh*t! Today, we call it something a little more appetizing.
This military dish originated in the early 1900s. Some claim the dish came from the Army, others the Navy.
There are also variations of the recipe. Some versions use ground beef and others use sausage with a sausage gravy.
Either way, this classic breakfast dish became popular after soldiers returned home craving a warm meal and reminders of their service.
Ingredients to make this classic recipe
Head to your local grocery store to the canned meat section.
Grab a glass jar of Hormel or Armour dried chip beef or find Buddig Beef in the refrigerated section near the packaged lunch meats.
What is dried beef?
It's thinly sliced beef that has been smoked, salt cured, and then cut into round or rectangular slices.
It's the perfect kind of meat for this recipe.
In addition, you'll need all purpose flour, butter and whole milk or heavy cream.
How to make creamed chipped beef
An important step when making this SOS recipe is to rinse thedried beef in warm water to remove the excess salt. If you skip this step it will result in an inedible too-salty breakfast.
Next, tear or chop the beef into small pieces.
Now depending on how creamy like it, you'll use equal parts of flour and melted butter to make a roux in a large skillet over medium heat.
Add the chopped beef to the roux. Next, brown or cook out the raw flour taste before adding the milk or cream.
Add more or less milk depending on how you like the consistency of the chipped beef cream sauce
Once done, serve the chipped beef and SOS gravy over toasted English muffins or a thick piece of toasted bread. Season with black pepper

How to Make Creamed Chipped Beef on Toast
Creamed Chipped Beef on Toast or English Muffins is the ultimate iconic dish that combines creamy gravy over dried beef and is served on toasted bakery bread or English muffin.
Servings: 6
- 2 ounce jars of Armour dried beef
- 6 English muffins, split or bakery bread, toasted
- 1/4 cup flour
- 1/4 cup butter
- 2 -3 cups milk or cream

Shred the beef into bite-size pieces and place in a colander. Run the shredded beef under hot water for about 30 seconds to remove the salt from the beef.

In a sauce pan, melt the butter then add the beef stirring for about two minutes. Next, add the flour and stir until incorporated, about 2 minutes Then add the milk slowly stirring to thicken your gravy. If you prefer a thinner more saucy gravy add more milk.

Once the chipped beef and gravy has thickened to the consistency you like, serve it over toasted English muffins or bakery bread.
